Reshmi Chicken Handi

Reshmi Chicken Handi or Chicken Handi or Handi Chicken is a Gravy Recipe which is a combination of Chicken cooked along with vegetables – like onion & capsicum and rich – creamy gravy made with milk & cheese. Few people use coconut to add flavour but I replaced it with almonds.

This, Reshmi Chicken Handi is a main dish that comes from Pakistani Cuisine. It was originated in Kolachi Restaurant, Karachi. Reshmi means Silk, Handi means vessel, the word “Reshmi Chicken Handi” refers to Chicken gravy made in a vessel that is as fine and as soft as silk. Ingredients

First marination

  • Chicken 750 gm
  • Ginger paste 1/2 tsp
  • Garlic paste 1/2 tsp
  • Salt to taste

Second marination

  • Corn flour 2 tbsp
  • Black pepper powder 1 tsp

Frying the Chicken

  • Oil (just to shallow fry the chicken)

Sautéing the vegetables

  • Butter 2 tsp
  • Onions 2 sliced
  • Capsicum 3 sliced

For the Gravy

  • Oil 1 tsp
  • Butter 2 tbsp
  • Almonds crushed 3 tbsp
  • Green chillies chopped 2 tbsp
  • Red Chilli powder 1 tsp
  • Garam Masala powder 1 tsp
  • Coriander powder 1/2 tsp
  • Cumin powder 1/2 tsp
  • Cream 1 cup
  • Cheese cubes 2 (small)
  • Salt to taste
  • Black pepper powder 1/2 tsp
  • Milk 1 cup

Method for the preparation of Reshmi Chicken Handi

Marinating the Chicken

  1. Add the cleaned chicken in a bowl, mix salt and ginger garlic paste.
  2. Leave for 5 minutes, the left-over water will ooze out from the chicken, drain that.
  3. To it, add corn flour and black pepper powder.

Frying the Chicken

  1. Heat oil in a wok, add the marinated chicken. Note: Add oil to shallow fry the chicken, don’t waste by deep frying because we don’t want to reuse the oil.
  2. You will have to do this in two batches because we don’t want to over crowd the wok.
  3. Fry them till the chicken turns light brown.
  4. Keep the fried chicken aside.

Sautéing the vegetables

  1. In a pan, melt the butter (Note: Heat the pan to melt the butter. Don’t let the butter get brown) add onions and let it turn translucent. Adding onions to the pan will reduce the temperature of it.
  2. Add the sliced capsicum, sauté for 2 minutes.
  3. Remove the vegetables from heat and keep them aside.

For preparing the Gravy

  1. Heat oil and butter in a vessel/handi, add the almond powder.
  2. Cook till the powder turns light brown, don’t let it turn dark brown otherwise it won’t taste good.
  3. Add the finely chopped green chillies.
  4. Whisk the cream and add the cream to the vessel, let it simmer on low flame.
  5. Crumble the cheese cubes and add them to the vessel too.
  6. Add red chili powder, garam masala powder, black pepper powder, coriander powder, cumin powder and mix properly. Note: You may sauté coriander & cumin seeds, crush them and use instead of the readymade powder, it will enhance the flavour.
  7. Check for the seasoning, add salt if necessary.
  8. Add the fried chicken and the sautéed vegetables to the handi. Mix everything gently.
  9. Drop in a cup of milk and cook till it reaches the desired consistency.
  10. Garnish with chopped green chillies and chopped coriander leaves.

Final Verdict:

I experimented this handi chicken recipe, it turned very tasty. Have this chicken reshmi handi with chapatis, it tastes amazing.
