Mixed Noodles

Ingredients

For Noodles

  • Noodles – 1 packet
  • Water – to boil
  • Salt – to taste
  • Oil – 2 tbsp

For Chicken

  • Chicken – 1 cup (chopped into half inch cubes)
  • Salt – to taste
  • Black pepper powder – 1/2 tsp
  • Ginger paste – 1/4 tsp
  • Garlic paste – 1/4 tsp
  • Oil – 1 tsp
  • Plain flour – 1 tbsp
  • Water – 1 tsp

For prawns

  • Prawns deveined – 1 cup
  • Salt – 1 tsp
  • Vinegar – 1/2 cup
  • Ginger paste – 1/2 tsp
  • Garlic paste – 1/2 tsp
  • Red Chilli powder – 1/2 tsp
  • Turmeric – 1/4 tsp
  • Oil – 1 tbsp

For mutton

  • Mutton – 1 cup
  • Water – 1 cup
  • Salt – to taste
  • Ginger paste – 1/4 tsp
  • Garlic paste – 1/4 tsp

Final assembling

  • Oil – 2 tbsp
  • Eggs – 2
  • Spring onions – 2 (finely chopped)
  • Beans – 5 to 6 (finely chopped)
  • Carrots – 2 (finely chopped)
  • Salt – to taste
  • Coriander leaves – 2 tbsp (chopped)
  • Tomato sauce – 2 tbsp
  • Vinegar – 1 tbsp
  • Soy sauce – 1 tbsp

Procedure

For Noodles

  1. In a large vessel, add water and give it a boil.
  2. Add noodles, salt and a 1 tsp of oil.
  3. Let it cook until the noodles are almost done.
  4. When you see the noodles are 85% cooked.
  5. Strain it in a large strainer and run cold water through it by gradually tossing the noodles.
  6. This will bring the noodles to normal temperature and avoid further cooking.
  7. Add 1 tsp of oil and toss well.
  8. This will avoid noodles from sticking.
  9. Transfer this to one large plate and spread evenly. Keep it open preferably under a fan.

For Chicken

  1. Marinate chicken with salt, black pepper powder, ginger paste, garlic paste, plain flour and a tsp of water.
  2. Deep fry the chicken pieces till golden brown, remove on an absorbant paper.

For prawns

  1. Devein the prawns and slit them into half.
  2. Wash them properly.
  3. To a bowl, add the slit prawns, vinegar and salt and leave it for 15 mins, this will remove the pungent smell to an extent.
  4. Strain it and remove the entire liquid content, wash it once and properly squeeze the prawns.
  5. Marinate prawns with Ginger paste, garlic paste, red Chilli powder and Turmeric powder.
  6. Heat 1tsp oil in a pan, add the marinated prawns.
  7. Stir it, keeping the flame high.
  8. The prawns will leave their water, you may strain that water.
  9. Place the prawns again in the pan and cook the prawns till they turn golden.
  10. Keep them aside.

For mutton

  1. Pressure cook the Mutton pieces along with water, salt, ginger paste and garlic paste.
  2. Wait for 4 to 5 whistles.
  3. If water remains, keep it aside, this will work as stock.
  4. Keep the Mutton pieces aside.

Time for Assembling

  1. Heat oil in a large wok, add chopped beans, chopped carrot, chopped spring onions greens and sliced spring Onion whites.
  2. Add salt, wait for 2 minutes.
  3. In a small bowl, combine egg, salt and whisk it properly.
  4. Add the whisked eggs to the wok.
  5. Scramble it properly, add the cooked chicken, prawns and Mutton. Stir well.
  6. Now add the reserved Mutton stock.
  7. Cook on high flame till the water completely absorbs.
  8. Drop in tomato sauce, vinegar and soy sauce.
  9. Add the noodles and stir on high flame.
  10. Check for seasoning and add salt and black pepper powder if necessary.
  11. Garnish with spring onion greens and chopped coriander leaves and serve hot.
